Rich low-carb chocolate cake

Father's Day is coming up on Sunday, so why not treat  Dad to some delicious chocolate cake? Best of all, it's healthy, and, if you don't tell him it's low-carb, he will never know. Once again, I've found the recipe in the fabulous baking book "Fristende Lavkarbo"

Ingredients
200 g 70% chocolate
200 g butter
50 ml strong coffee
100 ml erythritol (or another sweetener)
1 teaspoon vanilla powder
3 eggs
200 ml ground almonds

Procedure
Break the chocolate into pieces and melt in a pan together with butter and coffee. Remove from the heat and whisk in sweetener and vanilla. Let the chocolate mass cool down.

Meanwhile, whisk the eggs lightly in a different bowl. Then, add the eggs and ground almonds to the chocolate mixture and stir. Then, pour the batter into a  22 cm spring form that you have coated with butter/oil.

Bake on 180 degrees C in the middle of the oven for 20 minutes, and voila, you will make your Dad/father in the family very happy!



Serve for example with cream, berries, low-carb ice cream or some sugar-free jam, like I did here.

  1. This looks amazing, and also quite simple with only a small number of steps. Certainly quicker than a lot of other LC cakes.

    Would you mind converting the measurements for the ingredients from mls to Cups or Tablespoons for the almond meal and sweetener please?

  2. Thanks for the suggestions, NSW girl :) I have discovered that Scandinavian recipes (typically in dl or ml) tend to use measures that don't convert well to cups... For example 50 ml can be rounded to 1/5 cup according to http://www.thecalculatorsite.com/conversions/liquidvolume.php. 200 ml almond meal is 0.8 cups :-/ Tricky... I'll see what I can do though for the future :)

    Is it possible to give me a nutritional breakdown please so I can see how much carb, dietry fibre, etc.? It would be really appreciated. Thanks :)

      Thank you for asking. However, at the moment I don't think I will be adding nutritional breakdowns to the recipes. It kind of takes the fun out of cooking a bit, and it reminds me too much of my old calorie-counting days, if you see what I mean :) May I suggest you use an app where you punch in the ingredients, and it does it for you?

  5. Hey! I am wanting to make this but all the dark choc I find in the supermarket has a fair amount of sugar added. Could I sub the 200g dark choc for x amount of cocoa? Or cocoa + another ingredient?

      I use either Lindt 70 or 85% (as the Black and Green organic-one seems to have disappeared from my supermarket shelves), do you have any of those available? Some pharmacy chains also has that sugarfree-range of chocolate, but my stomach doesn't tolerate it... Hmmmm, I'm not sure what to substitute with, as 200 g of chocolate adds a fair bit of "bulk"... How about ordering from Iherb instead? They have a variety of dark chocolates, and I find them a good, reliable company. It's quick and not too expensive to order from there.
